- ¼ cup gin (60ml)
- ¼ cup juiced greens (60ml)
- A squeeze of fresh lemon
- ½ cup tonic (125ml)
- Herbed ice cubes
- Pea shoots or celery curls for garnish
To make the herbed ice cubes, freeze wilted herbs in an ice tray with water. Prepare this in advance to allow for freezing time.
Add the gin, juiced greens and a squeeze of lemon into a Le Creuset Burgundy Wine Glass. Add the herbed ice cubes and top up with tonic water. Garnish with pea shoots or celery curls.
