Giant Couscous and Dukkah Avo Green Bowls

INGREDIENTS

400g pearl couscous, cooked to packaging instructions

Toppings of your choice:

  • Shaved carrots
  • Ripe avocado halves with a squeeze of lemon
  • Shaved raw beetroot
  • Shredded kale
  • Celery curls
  • Crunchy radish slices
  • Chopped spring onion

Easy Green Pesto Style Dressing:

  • 1 cup baby spinach
  • 30g basil
  • 2 Tbsp. toasted pine nuts
  • 100ml olive oil
  • Salt to taste

Handmade Dukkah Spice:

  • 1/2 cup toasted almonds
  • 1/2 cup toasted pistachio
  • 1 tsp salt
  • 1 tsp black pepper
  • 4 tsp toasted sesame seeds
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds

METHOD

Easy Green Pesto Style Dressing:
Blend in a food processor until smooth. Fold couscous or grain/pasta of your choice through the pesto until well coated.

Handmade Dukkah Spice:
Blend to a breadcrumb consistency and keep in an air-tight jar until ready for use. It will keep up to a week or so.

Assemble the couscous with the toppings of your choice. Sprinkle with Handmade Dukkah Spice.
